• Before I talk about the recipe I created tonight, I want to thank gluten-free girl for her inspiring writing and also for her wonderful links to gluten-free places, restaurants, etc. Her blog, along with the blog written by gluten free goddess are the two blogs that really helped me to know that I wasn’t alone in the foodie world of gluten-free bloggers. Based on recommendations that they make, I have decided to start keeping a list of links on the right side of my blog that list really hip, cool places that you can visit to buy gluten-free foods. Though I haven’t necessarily tried them, they sound too cool! And also, it will give me an online place to store the places I want to visit at some point.

    Several years ago, my husband and I stayed at White Pillars Bed & Breakfast in upstate NY, run by a husband and wife team. The husband told us that when their sons come home from college for a visit, the father challenges them to a cookoff. The idea being to use whatever ingredients are on hand in the frig and/or the cupboard, using them to create a gourmet meal. Ever since we stayed at that B&B, I occasionally give myself the same challenge. Tonight was one of those nights, and a successful one it was!

    I wish I could take a picture, but alas, we won’t have a camera until the end of the week. Trust me, it looks and tastes fantastic.

    Thai Chicken & BokChoy in Sweet Red Chili Sauce

    Chicken tenders (about 4 cups cooked and chopped into 1/2 pieces)
    Olive Oil
    Bok Choy (one head chopped into 1 inch pieces)
    Garlic , 1 minced clove
    1/4 cup chopped cilantro
    2 scallions, chopped
    1 shallot, chopped

    Dressing: Mix 1/4 cup lime juice, 1/8 cup Thai Kitchen fish sauce, 2 tablespoons Thai Kitchen Sweet Red Chili Dipping & All Purpose Sauce, 1 tablespoon sugar, 1 minced garlic clove.

    Saute chicken tenders in olive oil (not sure of amount) until crisp and browned. Saute bok choy in olive oil. Add 1 minced garlic clove and remove from heat.

    Combine cooked chicken, bok choy, garlic, cilantro, scallions, shallot. Pour dressing over the chicken mixture and combine well.

    Yum! We ate it without anything else, but when I make it again, I would think about making something to go with it.

    With a few key ingredients on hand, anybody can make a delicious gourmet meal!
