I’m not sure what I’ll do with the peppers – maybe I’ll use them in a pasta dish or in an omelette or maybe we’ll make a salad with the roasted peppers and goat cheese. I marinated them in some olive oil, fresh minced garlic, salt & pepper.
The idea of roasting the peppers came about because of two things – first, they were on sale for $1.99 lb. I should’ve gotten more of them – they roasted so beautifully. Maybe I’ll go back to the grocery store tomorrow and see if they’re still on sale. And the second reason is because I was browsing through Whole Foods and came across some chipotle peppers in adobo sauce (I think that’s the name of the sauce). Of course, it was too late to call the company and see if they were gluten free. And then I thought, I really need to start making homemade condiments. Thus, the roasted red peppers.
