What does the Gluten Free Diva do on a day when the snow is falling fast and furious and the weather report promises that this will be a historic snowstorm? She gears up in her bright yellow snow shoveling jacket, heavy fleece mittens and hats, and she shovels. Probably completely unnecessary to shovel, as there will be much more snow, however it made her feel productive!
Yes, that would be me I’m talking about. So what did I do after I finished shoveling? I came inside and I made my favorite gluten free Figgy Oatmeal Deluxe. Full of juicy golden raisins and dried figs, and lots of other health promoting goodies, I sat down to a steaming bowl of my favorite morning cereal.
In addition to being delicious, one of the other things I like about this cereal is that it is quick and easy to make. It cooks up in about five minutes, and is an exceptionally healthy way to start the day. Full of fiber from the oats and the raisins and the figs and the walnuts, this fuels me for the morning. When I’m in super organized mode, I line up paper muffin cups and fill them with all of the dried ingredients in this recipe, and store them in a large container. Then, all I have to do is dump the contents from one cupcake liner into the pot, add milk and vanilla extract, and in five minutes, my Figgy Oatmeal Deluxe is ready to eat.
One of the many advantages of eating my Gluten Free Figgy Oatmeal is that it is bursting with fiber. While most Americans consume under 15 grams of fiber a day, increasing that to between 25 – 35 grams a day is ideal. Just in case you’re interested, permit me to do my health coaching dance and wig out on why fiber is so important. Increasing your intake of fiber can keep your colon clean and healthy, reduce your chances of heart disease and some cancers, lower cholesterol and blood pressure, control your sugar levels, soften your stool and reduce inflammation. And it can even help you with weight loss.
This is an approximation of the amount of fiber in my Figgy Oatmeal Deluxe. A quick run of the math shows that you get a whopping 12.5 grams of fiber in your morning bowl of Figgy Oatmeal Deluxe. Seems like a no brainer to me. Tons of benefits and it’s delicious to boot. What are you waiting for?!? Go for it!
1/4 cup rolled oats = 2.5 grams fiber
2 dried figs = 7 grams fiber
handful raisins = 1 gram fiber
small handful walnuts = 2 grams fiber
Gluten Free Figgy Oatmeal
1/4 c. rolled oats
1 large dried fig + extra fig for garnish, diced
1 handful golden raisins
1 tsp. ground chia
1/2 tsp. ground cinnamon (or more to taste)
1 c. milk of choice (I used almond coconut milk)
1 tsp. vanilla extract
pinch of sea salt
small handful walnuts, chopped
drizzle of agave
- Put all of the ingredients in pot except for the walnuts and agave.
- Cook on medium low until desired consistency.
- Serve with walnuts and agave.
I like to undercook this just a little bit as it continues to thicken when poured into the serving bowl. Make sure that you use certified gluten free oats. I use either Bob's Red Mill or Trader Joe's.
